Fermenting Workshop

Gut health, the Micro Biome and Fermenting Workshop with Nikki Valentini


In the workshop we will cover:

  • Gut health and the Microbiome and how this can affect overall health.
  • Why is gut health so important.
  • How to improve gut health.
  • Fermenting and it’s benefits, tastings included.

We will then make:

  • Sauerkraut
  • Kimchi
  • Make a simple ‘Shrub’ (gut health, alkalising vinegar drink)
  • Lacto fermented vegetables


Participants will take home: a jar of Kimchi, Sauerkraut and lacto fermented vegetable.

Detailed notes will be included.

Discussions will include sourdough cultures, Kombucha and Jun, Kefir cheese making, Kefir, fermented cashew cheese.

Bring 3 wide mouth jars, stainless steel or glass bowl, chopping board, knife and mixing spoon.


About Nikki:


“I am a Permaculturalist and chef, specialising in plant based food and health.  Currently undertaking a health sciences degree in Nutritional Medicine. Whole, healthy food is my passion. I have been fermenting for the last 15 years, starting with a sourdough leaven that was gifted to me by a friend. My intrigue grew from there and I soon had many fermenting ‘pets’ bubbling away in my kitchen. I am fascinated with making anything from scratch, meaning I harvest and process my food from the earth to the tongue as much I possibly can.”
