Miso making Workshop with Nikki Valentini


Make your own Miso paste at home!

In this workshop we will learn to make traditional unpasteurised Miso Paste.

Each student will learn about the process and participate in making a batch of Miso which they will take home with a recipe and class notes.

Miso tastings will also be part of the class.

Price includes Koji (the inoculant to make the miso paste), soy beans or chickpeas, salt and skills!

Students should bring a wide mouthed glass jar or crock and mixing bowl.



About Nikki:


“I am a Permaculturalist and chef, specialising in plant based food and health.  Currently undertaking a health sciences degree in Nutritional Medicine. Whole, healthy food is my passion. I have been fermenting for the last 15 years, starting with a sourdough leaven that was gifted to me by a friend. My intrigue grew from there and I soon had many fermenting ‘pets’ bubbling away in my kitchen. I am fascinated with making anything from scratch, meaning I harvest and process my food from the earth to the tongue as much I possibly can.”
